Although it’s popular over the other side of the pond and enjoyed by many, salmon jerky is very new to the UK market. Today, we’re going to answer some of the burning questions you have around salmon jerky.
We are often asked if salmon jerky is the same as smoked salmon. Although our salmon jerky goes through a smoke process, it is a completely different product to smoked salmon. Salmon jerky is a cooked product, that is ready to eat without refrigeration and it can be kept in its retail bag for up to 12 months. This is because we pasteurise the salmon during the cooking process. We do introduce smoke into the process, however this is combined with cooking and it is just to add a delicious smoky undertone to the jerky.
We use fillets of Atlantic salmon to make our jerky. We trim the fillets into small bite size pieces and we marinate them in a special blend of herbs and spices before the cooking process. Our Zesty Lemon & Dill marinade is inspired by the fresh tastes of Scandinavia, and we give our jerky a dusting of citrus to to develop the flavour. After cooking and smoking the salmon, we hand pack it into retail packets, and voila, we have salmon jerky!
